Loaded Baked Potato Chowder {Sunday Cookin'}
Last week's post, al dente, really got me thinking how fun it would be to feature a new recipe every week, and Sundays seemed like the perfect opportunity!! This is a simple way to keep Brandon and I honest about what we eat, help us to eat healthier and maybe share a delicious recipe with you!
So, for my first recipe to feature in this SUPER fun new series is:
Loaded Baked Potato Chowder.
What you will need:
3 large baking potatoes
3 1/2 c. milk, divided
4 oz cream cheese, softened
2 tbsp butter
1/4 c. green onions, sliced
4 oz sharp cheddar cheese, grated
1 1/2 tsp salt
1/2 tsp coarsely ground black pepper
(optional) Toppings such as chopped cooked bacon or sour cream
1. Slice potatoes in half lengthwise; place in a deep covered baking dish. Pour 1/2 cup of milk over potatoes and microwave on High 11 minutes. Remove from microwave and stir potatoes. Cover and reheat for an additional 8-11 minutes or until potatoes are easily pierced with a fork. Remove from microwave and mash potatoes.
2. Meanwhile, whisk cream cheese until smooth in medium bowl. Slowly add remaining 3 c. milk, whisking until smooth. Add mixture and butter to potatoes and microwave for an additional 3-5 minutes or until mixtures is hot.
3. Carefully remove baking dish from microwave. Grate cheese over chowder; add green onions, salt and black pepper and mix until cheese is melted. Serve with toppings, if desired. Enjoy!!
Yields: 6 servings
