Summer Salad {cucumbers, tomatoes + onions}

Summer is HOT here in Texas, and with the summer heat comes easy, no fuss recipes in our house. I just made that rule up. But really I should've started this rule long ago. Because holy bageezus, my garden is a never-ending-produce-making-machine. I've got onions and tomatoes out the whazoo right now. And I'm loving it! Fresh veggies, that I grew. How about that?! It doesn't get any better than this. 

My mother-in-law makes this salad quite a bit in the summertime when cucumbers, tomatoes and onions are the freshest. Brandon and my father-in-law practically inhale this salad every time she makes it. Husband actually requested I make this summer salad specifically, except add way more vinegar. And that I did. 

I actually have a whole counter full of tomatoes, peppers, and onions. I've looked up an insane amount of different canning recipes to save my tomatoes - tomato pastes, sauces, soups and even raw canned tomatoes. Ooh I can't wait to get canning!
