Evil has a new name AKA my Cake Ball recipe

Last week I endeavored the crazy task of making cake balls...   I'm not sure if there will ever be another time that I will make these sinful treats again. EVER.


  

A little background:  After scouring the web for the perfect recipe I've come to the conclusion that no recipe is perfect {or correct!}.  I had recipes from about 5 different blogs and even a printed version from the The Food Queen herself. 

Every recipe made it seem SO easy.  No offense, but they all lied.  Especially about the dipping part.  First, the chocolate, oh the chocolate -- it took two minutes of microwaving and stirring then microwaving and more stirring. 

Then there came the dipping of the balls into chocolate - yeah, major fail!!  All of the balls fell apart in the chocolate leaving yummy cake pieces in my chocolate.  Oh the waste. 
{side note: freeze longer than listed}

After a few more pieces fell off I decided to call it quits.

Not really.  But being frustrated, red faced and sweaty isn't the best combination in the kitchen.  I decided to Hell with it and grabbed a handful of melted chocolate and rubbed the chocolate all over the cake balls.  Best decision I've made while baking, I think, ever!  Quite messy too, but oh so delicious. 

Second time around I decided to work a little faster, dip quicker and sprinkle, sprinkle, sprinkle. I mean, what's a cake ball without sprinkles?  I'll tell you, an ugly deformed piece of chocolate.  Sprinkles serve a great purpose here.  Not only are they pretty, but they help to distract the eye and cover up all your mistakes.  Sprinkles are full proof.  Just not for every aspect of your life.  ;)

Ok, so now for the recipe!

1 store bought package cake mix
1 16oz can of frosting
{Check out Paula Deen's list for great cake and frosting combinations}
1 12oz bag of semi-sweet chocolate chips
cookie sheet
parchment/wax paper

Bake the cake mix according to the directions on the box. {Licking the bowl is highly encouraged here}. Allow cake to cool for 30 minutes. Crumble the cake in a large bowl. Add the frosting and mix until well combined. Place the bowl in the refrigerator for at least 3 hours {overnight recommended}. 

Line a baking tray with wax paper. Form the cake into small balls. Place on wax paper. Once you have used all of the cake mixture, place the baking tray in the freezer for 1 hour {3-4 hours recommended}. Melt the chocolate in a glass bowl in the microwave, stirring every 5-10 seconds until smooth.

Remove the balls from the freezer. Using {your hands} a fork, pick up the balls one at a time and dip in the chocolate. Use a second fork to slide the ball off the first fork onto the wax paper lined baking tray. 

**If the balls fall off the fork into the chocolate {like mine did}, they are not firm enough to work with and you'll need to place them back in the freezer for additional time 

Once you have covered all the balls in chocolate coating place the tray in the refrigerator until the chocolate coating is set. At this point you can drizzle other chocolate or sprinkle the balls for decoration.


Serve with a glass a milk.  And enjoy!












I promise you can't eat just one. ;)

  2. Um, delicious. I don't know that I would have the patience to make them though...that's a lot of chilling and freezing...I would probably eat all the melted chocolate before I could get them on the cake.

  3. My sister makes them all the time and somehow has found an easy way to dip them because they turn out near perfect. I, on the other hand, want to throw the balls at the wall by the end of baking. Yes, definitely freeze them longer, and we also found that only taking a few out at a time is better and will eliminate the crumbs in the chocolate. Yours look great though!

  8. i love making cake balls!!!!!!!!! so much fun! i get in so much trouble though....eating wayyyy too many! :) that is why i can only make them on holidays. must spread out the weight gain!

  12. Well they still look phenomenal, Alisha! And I agree, making cake balls is NOT easy... I've made them twice, and as good as they taste, I can't bring myself to make them again.

  18. Yeah, cake pops are ALOT of work. And it's not easy. IF you try to make them again, try cake POPS. It makes the dipping process alot easier...just make sure that you put the sticks in the cake balls before you put them in the freezer.
