Nothing better than Homemade Jam
So, my friend Amy made homemade jam a few weeks ago, and her efforts tweaked my interest! Since then I've been wanting to try my hand at this jam-making-thing.
Homemade jam is really quite easy. If you've never made homemade jam you're really missing out. You've gotta try it, but I will warn you. Once you go homemade, you won't go back to ordinary store bought jams or jellies.
My recipe is called Freezer Jam. It calls for 2 1/2 pounds of fruit (your choice: berries, peaches, plums, nectarines, etc.), 1/3 cup lemon juice, 2 1/2 cups of sugar and 1/3 cup of powered, no sugar pectin.
Boil your crushed fruit and lemon juice on medium high heat. Whisk together the sugar and pectin. Add to boiling fruit, stirring until sugar mixture completely dissolves. Return to a rolling boil. Boil 1 minute. Let cool and transfer to jars. Be sure to leave 1/2 inch space at the top of the jars. Seal and let sit until cooled to room temperature. To store, freeze, up to 6 months. To enjoy immediately, refrigerate, and serve cooled.

You did it! Yay! About how many jars did you get? I need to make more. Our recipes are a little different since mine doesn't require boiling, but I love to see all the different ways to make jam out there!
