Lemon Pepper Chicken Salad {Sunday Cookin'}
Well lovelies, it's Sunday again, and I've got a yummy recipe to share for Sunday Cookin'!! Today's recipe is healthy, and a sure fire meal to cook for Valentine's dinner if you're staying in this holiday. Hope you enjoy this one…
Warm Lemon Pepper Chicken Salad
What you will need:
8 oz sugar snap peas
1 1/2 lbs. red potatoes
2 tsp salt4 boneless, skinless chicken breasts
2 tbsp lemon pepper rub1 lemon1 garlic clove
1/4 c. olive oil1 medium red bell pepper
1/2 small red onion1 jar marinated artichoke heart quarters(optional)
1/2 c. chopped fresh parsley1.
Place peas and 1/4 c. water into a large baking dish. Microwave covered on High for 2-3 minutes or until crisp tender. Drain and rinse under cold water and set aside. Slice potatoes and place into baking dish with salt and 4 c. of water. Microwave on High for 13-16 minutes or until tender, stirring twice; drain and set aside.
Meanwhile, heat a medium pan over medium heat for 5 minutes. Lightly coat pan with olive oil. Rub chicken with 1 tbsp of lemon pepper rub. Cook chicken 7-9 minutes or until cooked thoroughly, and juices run clear. Remove from pan; set aside and keep warm.
For dressing, juice lemon to measure 2 tbsp. Combine juice, remaining rub and garlic (minced) in small bowl. Slowly add 1/4 c. olive oil, whisking constantly; set aside.4. Thinly slice chicken, bell pepper and onion. Combine peas, chicken, bell pepper, onion, artichoke and parsley, if desired, in large mixing bowl; mix well. Add potatoes and dressing; toss gently.
Serve warm.
Yields: 6 servingsper serving 290cal., 12g fat, 26g carb, 22g protein
