The Greatest Zucchini Bread Recipe
For all you health foodies out there, this one's for you. This is, by far, the best zucchini bread I've ever made. Brandon agreed by almost eating the entire loaf, but my stubborn and ferocious belly fought hard against. And won. :)

Recipe:
1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon ground nutmeg
1 beaten egg
1 cup sugar
1 1/2 cup finely shredded zucchini
1/2 cup vegetable oil
1/2 cup chopped walnuts or pecans
OR if you're a fan of walnuts or pecans substitute 1/2 cup chocolate chips
OR if you're a fan of walnuts or pecans substitute 1/2 cup chocolate chips
Directions:
Grease the bottom and sides of your loaf pan; set aside. In a medium bowl combine the flour, cinnamon, baking soda, salt, baking powder, and nutmeg. Make a well in center of flour mixture; set aside.
In another medium bowl combine egg, sugar, zucchini, and oil. Add zucchini mixture to flour mixture all at once. Stir just until moistened (batter will be lumpy) Fold in nuts. Spoon batter into your loaf pan.
Bake at 350F for 50-55 minutes. I always insert a toothpick and if it comes out clean, then you know it's done. Cool in pan for 10 minutes. Serve and Enjoy.
And, if you're really daring, substitute the zucchini for apple. Prepare as above, except substitute 1 1/2 cups finely shredded, peeled apples! Mmm, Mmm good!!
